About This Coffee
This coffee is the product of the hard work of approximately 650 smallholder farmers in Yirgacheffe, Ethiopia, each cultivating an average of 2 hectares of land. Our exclusive grade 1 lot is produced using an augmented natural process that involves an extended 'anaerobic' fermentation with the addition of fresh strawberries.
The Yirgacheffe district, located in the Southern Nations, Nationalities & Peoples region of Ethiopia, is renowned for producing some of the world's most sought-after microlots. The altitude, soil fertility, rainfall consistency, and wealth of local knowledge all contribute to the exceptional quality of Yirgacheffe coffees.
Once the cherries are carefully selected, they are then fermented in sealed barrels with fresh strawberries for around 10 hours. The sugars from the strawberries fuel the fermentation process, infusing the cherries with a subtle strawberry flavour. The cherries are then sun-dried on raised African beds for 12-15 days, resulting in a beautifully refined and unique cup of coffee.
